The winemaker

The Domaine Jean Chauvenet embodies the idea of ​​the Burgundian family estate: a small area (10 hectares) many names (9) of the most famous coasts of Burgundy, Côte de Nuits, with the single grape, Pinot Noir. This incarnation gives red wines of incomparable texture, silky and fine. At the head, Christophe Drag and his wife Christine are working with only one rule: respect for the expression of each of the soils for different wines. In the process of certification, the field practice of "rational control" -a way of culture that minimizes the contributions of pesticides -since 1994. The vines are grassed since 2003. The goal: reduce erosion and temper the natural vigor to master returns. Christophe Drag also implements strict debudding which provides better ventilation of clusters and thus a better health at harvest. The harvest is manual and decided when the grapes have reached the right maturity - maturity phénolique- the tannins. Thus the wines of Domaine Jean Chauvenet reveal the finesse, the elegance, signature wines, supported by a structure that emphasizes their aging potential.
