The winemaker
Virginie takes great care of her 25 hectares of Chardonnay, planted on limestone soil mixed with clayey marl. The organic winemaker refuses to use insecticides or pesticides, despite the sometimes complex climatic conditions. Virginie only harvests when the grapes are perfectly ripe. With long maturation periods (18 to 22 months) in barrels and stainless steel vats, as well as light filtration, she produces deep, flavorful and delicate white wines.
