The winemaker

It was during the grape harvest in 1981 that Christophe FERRARI fell in love with the noble profession of winemaker. By the time he had finished his studies, in 1987, he had settled in IRANCY as a young winemaker. From then on, this passion would never leave him. Unable to benefit from a family inheritance, he worked to reunite two small aging estates. A few months later, DOMAINE SAINT-GERMAIN was born, named in honor of the village's patron saint. Christophe FERRARI currently manages 14 hectares of vines in IRANCY and CHABLIS. His estate, DOMAINE SAINT-GERMAIN, is located on the promenades of IRANCY and is easily accessible. Committed to the quality of his wines, Christophe FERRARI has preserved traditional winemaking methods such as ageing in oak barrels, while combining them with modern techniques to improve wine quality and hygiene. At DOMAINE SAINT-GERMAIN, wine quality is an essential concern. Vinification is carried out with respect for Burgundian tradition (hand-picking, classic fermentation, ageing in oak barrels) combined with the controlled use of a number of modern techniques designed to improve wine quality (thermal regulation of fermenting musts, vacuum bottling, etc.).
