The winemaker

It was during the harvest in 1981 Christophe FERRARI will fall in love with noble winemaker. Time to finish his studies and in 1987 he moved to IRANCY as young winemaker. Now that passion never left him. Having benefited from a family inheritance, he works to raise two small farms aging. Thus is born a few months later, the DOMAINE SAINT-GERMAIN, name chosen in honor of the patron saint of the village.  Christophe FERRARI currently operates 14 hectares of vineyards in Chablis and IRANCY. Its operation, the AREA SAINT-GERMAIN, is located on walks IRANCY and is easily accessible. Concerned about the quality of its wines, Christophe FERRARI has preserved the traditional winemaking methods such as breeding in oak barrels, involving modern techniques in favor of improving the quality and hygiene of wine. In AREA SAINT-GERMAIN, wine quality is a key concern. The wine is made in respect of the Burgundian tradition (hand picking, classical fermentation, oak barrel aging) combined with the controlled use of some modern techniques to improve wine quality (thermal regulation of musts fermentation, bottling vacuum ...).
