The winemaker

The wines are aged in oak barrels in the cellars secular (17th century, composed predominantly calcareous clay) following the most ancient traditions of Burgundy. The harvest is done manually, wine making is traditional, bottling is performed at the Domaine. For all these reasons the wines are harmonious, balanced, full bodied and pleasantly large breed. In 1997, Manu Bautista succeeded his step-father Jacques Tupinier, echoing a farm 10 hectares of appellation vineyards MERCUREY that is constantly developing.
