In a few words ...

"terroir: the volnay vineyard, located between pommard to the north and meursault to the south. On a steep slope, in the middle of its vineyards, it faces east/south or east. The commune of Volnay produces only red wines. There are no Grand Crus, but 26 Premier Crus. The vineyards are planted on extremely fine subsoil composed of Argovian limestone marl and, in the area bordering Pommard and Meursault, Bathonian clay-limestone scree. There is also a great deal of calcium-vinification: the grapes are harvested by hand in small crates to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. The grapes are macerated in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during fermentation. Aging lasts around 18 months in barrels from our cooperage, of which around a third are new.Tasting notes: this fruity wine offers aromas of strawberry, undergrowth, violet and vanilla... the palate is soft, silky with present but delicate tannins. A good length on the palate, the wine can be enjoyed now, but can be kept for a few more years...food & wine pairings: grilled red tuna, tataki beef, terrines (rabbit, pork, etc...), moussaka, veal liver, fondue bourguignonne, steak tartare, roast veal, veal chop, duck breast salad, baked guinea fowl, hard cheeses..."
