The winemaker

Cour Des Lys is a hymn to the rediscovery of great gastronomic champagne wines. It is also the story of a life, of a major change of direction, a profound rethinking. The owner, a former executive, changed his life one day to find himself and make a new start. The estate's wines are sharp, precise, lively and rare. The vintages are only released very rarely, and are only available to chefs, who are great and loyal fans of this fine house, and in extremely confidential quantities. The philosophy is simple: excellence or nothing. The wines are aged in wood, partially or totally. Sulphur and dosage are reduced to a minimum, in order to respect the terroir, the grape variety and the identity of the vintages. The ageing is long in order to gain in complexity and finesse.

The small house has recently expanded its range and has worked on one of its favourite grape varieties. Pinot Meunier. The result is 2 cuvées in blanc de noirs, highlighting two diverse and complementary expressions of this little known and underestimated grape variety:

- The M², the only Brut in the range, is a champagne of immediate pleasure, with a fruity opulence in a case of freshness, greed and balance. - The Premier Délice, a taut, straightforward extra-brut, with a crystalline, precise, mineral and saline palate.
