The winemaker
Located Avize terroir of the Côte des Blancs, Champagnes domain Fallet Prévostat are developed "old." The wine is made in small barrels. Aged for 7 to 30 years on slats in natural caves carved into the chalk, almost everything is handmade. The area usually starts his crop a few days after the "official" and spans almost two weeks. The grapes harvested at the beginning and the end of the harvest therefore have a different maturity. The cellars are carved into the rock and are situated on three levels. Tens of thousands of bottles are stored at a temperature and a rate of perfect and constant humidity!
