The entire vineyard is cultivated using sustainable methods, with the utmost respect for the vines and soils. The grapes are harvested by hand, as is the Champagne tradition. The history of vines in Champagne goes back to the Tertiary era. The sky plays a key role. Atlantic mildness alternates with continental rigor. The vineyards of Champagne, the most northerly in France, have to deal with nature: spring frosts, hail and storms. The grapes ripen slowly, taking advantage of the climate. The history of Champagne is inextricably linked to that of the chalk in which it sinks its roots. The chalky soil, sometimes mixed with sandy and clay-limestone, retains the sun and then releases heat and humidity, acting as a regulator.
