The winemaker

The history of the Jean-Noël Haton Champagne House

The Jean-Noël Haton Champagne House was founded in 1928 by Octave Haton who was a pioneer in handling champagne in Damery. The operation is a family business that remains independent to produce a champagne of character from grapes grown in its own vineyard.
Since 1971, Jean-Noël Haton Champagne House is managed by Jean-Noël, accompanied by his son, Sébastien, who works mainly in the cellar. The champagne is elaborated with the traditional methods and the respect of the soil. More than 100 vats allow the vinification of each wine separately.
According to Octave, "Perfection requires the mastery of every detail. It is the expression of the whole that makes an exceptional Champagne".

The vineyards of the Jean-Noël Haton Champagne House

The vineyard of the Champagne house Jean-Noël Haton extends over 18 hectares of its own. It is completed by a supply from other wine growers who exploit a total of 110 hectares.
Champagne Jean-Noël Haton is made from the three traditional grape varieties : Pinot Noir, Meunier and Chardonnay. Pinot Noir is slightly in the majority. It occupies the most chalky part of the vineyard and contributes to the structure of the champagne. The meunier occupies a little less than a third of the vineyard and prefers the more clayey soils. It brings its roundness to the blend. Chardonnay covers the remaining quarter of the land. It brings its delicate aromas, floral and citrus notes, with a touch of minerality.
The Champagne house Jean-Noël Haton is keen to keep a traditional exploitation, respecting the soil and the grapes. Yields remain under control, in order to preserve quality rather than quantity. The grape harvests are carried out at optimal maturity.
The parcel-based vinification allows us to produce a champagne of very high quality.
