The winemaker

The vineyard on the land and Cormoyeux Romery, near the abbey of Hautvillers Dom Perignon, has a total area farmed 11 hectares of which a small part in Passy Grigny. The soil is characterized by a chalky basement which acts like a thermal regulator, it picks up moisture and releases it when the vine is most needed. The 200 meters of natural and chalk cellars 20 meters below ground allow conservation and maximum durability of 350,000 bottles of champagne at a constant temperature of 10 -12 ° C. Our house Champagne comes from the union of two families of winemakers, MONDET - MONGARDIEN / Pognot.
