The winemaker
During all the wine works that mark the year our goal is simple: a moderate harvest in volume (low yields Champagne) for both fruits ripe, healthy, and concentrated in flavor precursors and minerals. For this we strive to have a vigor and vegetative term measured: reasonable application of organic matter, winter pruning by us or with highly skilled workers, budding / suckering to air the foliage and modulate yields, tillage and controlled natural grass to maintain our soils and fight against fungal diseases and pests extremely wise emphasizing prophylaxis (preventive work that promotes biodiversity, the plant vigor module to develop an unfavorable environment to disease and pests).
