In the last century, a quality wine took a long time to open up, but its secondary and tertiary aromas were carefully preserved. Château Salitis wanted to make a wine "like in the old days", as our great-grandfathers used to do, with no destemming, old-fashioned crushing, traditional vinification with no exogenous additives, and long vatting.
