The winemaker

Rayssac Castle is an area where the vine was already cultivated in 1873. The field is located in the municipality of Conques sur Orbiel between Black Mountain and the medieval city of Carcassonne. It covers 37 hectares, of which 27 are currently operating at an altitude of between 140 and 180 meters. Set in a privileged natural environment, composed of scrubland, forests and almond trees, and our wines express all the features scents of the Languedoc-Roussillon region. The soil is characterized by a very thick layer limestone surface that optimizes the sunshine. strongly calcareous alkaline soils, there are many primary remains (shells, sea urchins ...) A clay and limestone subsoil allows the vine roots to seek deep freshness and aromatic complexity.
