The winemaker

The Domain

The property covers just over three hectares, planted with a majority of red grape varieties.
Syrah, Cinsault, Grenache, Mourvèdre and Carignon thus occupy 2.8 hectares on the estate and Grenache Blanc 0.3 hectares with vines averaging 35 years old.

The know-how

Claude Serra directs all technical aspects of the vineyard, the work of driving the vines, pruning and he determines the date of the harvest, which is done by hand. The estate is cultivated and conducted with reasoned viticulture practices. He also follows the vinification and maturation of the vintages. Finally, he carries out the blending and supervises the bottling.

The wines

Claude Serra offers several vintages of white and red wines.

The Pure Chardonnay Cuvée, IGP Pays d'Oc is a balanced and intense white wine to be drunk young. Its color is bright yellow and it offers a rich aromatic palette, with fruity and floral notes as well as vanilla flavors. It will be perfect with shellfish or freshwater fish.

The White Nouba, IGP Côtes de Thau 2020 is made from a selection of old Terret vines, which give it aniseed flavors and a characteristic texture. There are also aromas of Granny apple, lemongrass, black currant and iodine notes. The palate has a nice acidity, this is an ideal wine to accompany shellfish, grilled fish or shellfish.

The Pure Viognier Cuvée, IGP OC Viognier 2020 is a light, mineral and fresh white wine, offering a complex aromatic bouquet with floral notes and exotic fruit aromas. It has a nice balance, between volume and vivacity, with a rich mouthfeel and a lingering finish. It can be enjoyed as an aperitif, but also throughout a meal of salmon, poultry or with a platter of fresh cheeses.

Claude Serra - Pure Pinot Noir, IGP Pays d'Oc. The terroir of Villa Serra is ideal for revealing the cherry flavors of Pinot Noir and its freshness. By adapting Burgundian know-how for this cuvée, Claude Serra obtains a wine with a beautiful bright red color, with purple reflections. The aromatic palette opens with notes of peony, licorice and cranberry syrup, with a very fruity smoky finish. This is a perfect wine to accompany Asian dishes, grilled poultry or country-style charcuterie.

The Nouba IGP Pays d'Oc is a cuvée in the style of southern wines, both assertive and convivial. It is a balanced red wine, with great freshness and silky tannins. It can be drunk young, for an aperitif or with grilled meats, pizzas or a good cheese platter.
