The winemaker

In 1997, Dominica and Joelle Parayre decide to recreate the wine business of the family estate, built in an exceptional site, opposite the City of Carcassonne.Implanté on a nipple gently down to the Aude, La Pine Forest covers ten hectares surrounding buildings. At the border of the two major climatic influences of the region, the Mediterranean and the ocean, The Pine Forest combines two types of grape: Atlantic grape variety (75% of the vineyard): Merlot, Cabernet Franc, Cabernet Sauvignon; The Mediterranean variety (25% of the vineyard): Grenache. The almost permanent winds with dominant Cers and Autan or sea wind, have a key role in the quality of the plant and contribute to the typicality of the substrate.
