The winemaker

The Shamans Estate is situated on the southern slopes of the Montagne Noire, in a remote valley of the other vineyards, where they practice farming methods agrobiological which express authenticity with an exceptional terroir. (EcoCert and Demeter certified) The symbol, the black sheep, is a reminder that the Languedoc offers the opportunity to make different wines and high quality. The estate, about 15 hectares of vineyard is surrounded by woods and scrubland, isolated from other vineyards. This exceptional situation makes farming practices in agriculture Organic and Biodynamic totally respectful of the ecosystem and the land of shamans (AB and Demeter certification pending) Cers, predominant, helps dry the moisture on the grapes, and reduces the number of preventive treatments. The soil consists essentially of limestone and clay, with a shale plot. The benefit of clay is that it retains moisture, an essential virtue in the Languedoc. In line with organic and biodynamic approach to agriculture, the field trying to restore a natural balance between the vine and its environment, soil fauna and the local flora, the rhythms of the planets that guide our peasant labor. Winemakers domain prepare themselves their own composts are energized using specific biodynamic preparations. After spreading on agricultural land, they encourage microbial life and mineral and organic wealth that are the source of the expression of the Earth Shaman of Domaine wines. The vines producing red wines are between 25 and 50 years with some young plots of 5 to 10 years. These are Grenache Syrah Mourvèdre and Carignan which represent the bulk of production with a small old Cinsault vines also. For white, Marsanne and Roussanne are thirty years that produce a rich and opulent. A young vine Grenache Blanc, Roussanne and Clairette soon enter the assembly. In compliance with the qualitative and rational production, they maintain low yields from 25 to 30 hectoliters per hectare and manually harvest the grapes that will be sorted carefully before vinification.
