The winemaker

The great our grandparents parents were already practicing the gestures that we perpetuate. Located in the lovely Hautes Corbières, it is composed of 35 parcels of vines scattered on rocky hillsides common Talairan St Laurent de la Cabrerisse and Jonquières. We lead the vineyards spurred cordon, Guyot and always cup for the sake of quality and respect for nature. We reason every action always favoring prophylaxis. The charge of each vine is controlled so as to obtain a very healthy harvest perfectly ripe and perfect quality. The relatively high altitude of the vines brings the freshness necessary for the proper maturation of tannins while maintaining incredibly fruity and fresh. The cellar, ultra-modern and fully built with our hands, eco combines modern and ancient techniques materials. It allows us to work in gravity for the supply of grapes. Semi buried and enjoying a very efficient insulation, it is the technical and enjoyable tool that seems to us indispensable to the work of the grape and wine aging in the best conditions. Cubic coated concrete vats, all temperature-controlled, containers are particularly suited to our working mode for manual punching down and pumping gently. The precise control of fermentation temperatures allows optimized extraction. We produce several profiles of wines, some of the power, others more on ease but always keeping as a guideline great finesse. The elegance is our signature. The know-how, personal sensitivity combined with the technical and delivery ever matter to produce an increasingly pleasant wine and exceptional, this is our motor. Manuel, Dominique and Xavier.
