The winemaker

An estate as close as possible to its terroir


The Domaine des Aurelles was created in 1995, in the Languedoc-Roussillon vineyards, in the commune of Nizas, by Basile Saint-Germain and his wife Caroline.

The Domaine des Aurelles benefits from a rare geology that shapes an exceptional terroir. The vines are planted on slopes on very old quaternary terraces covered with thick layers of rolled pebbles.

Yields are deliberately low and the vines are particularly well cared for, no detail being left to chance. Committed to respecting nature and terroir, the estate's practices have been measured since 2005 and the vineyard's wines have since been certified free of pesticides, phthalates and many other inputs. In addition to the very serious and rigorous analyses of the Excell laboratory, the Domaine des Aurelles is certified biodynamic by the Demeter label since 2018. Naturally, the grapes are harvested by hand and are succeeded by several meticulous sortings.

In the cellar, the wines are aged for a long time in enamelled vats so that once bottled, they are civilized, digestible, subtle and improved by time.

The wines


The Aurel Rouge 2011 is a blend of Mourvèdre (85%) and Grenache (15%). The color is ruby red, the nose is elegant, fruity, spicy and mineral. On the palate, the wine is refined, mineral and spicy, with fine and silky tannins.

The Aurel Rouge 2012 is vinified with 85% Mourvèdre and 15% Grenache. With a deep red color, this wine gives off a complex and elegant nose, aromas of black fruits and spices. On the palate, silky tannins, refinement, minerality and spice.

The Aurel Blanc 2012 offers a bright straw yellow color and a complex nose with notes of yellow-fleshed fruits, citrus and flowers. On the palate, the wine is bold with a lingering, highly aromatic finish.
