The winemaker

In an ever-growing desire to do new things, and Sophie Stéphane Gallet Roc des Anges planted in 2008, 3 hectares of vines on the appellation Maury giving birth at Domaine Les Terres Fagayra. Wild land at the foot of an impressive limestone massif in the northern part of the appellation Maury.  With sufficient rainfall and lower temperatures, it is a place conducive to the development of natural sweet wines with elegance and balance. The soils of schist and calc-schist are particularly draining and encourage deep rooting of the vines.  Marjorie Gallet Stéphane and now grow these old vineyards using organic methods. Fermentation exclusively uses indigenous yeasts, the wine is 7 months in stainless steel (concrete vats for the vintage Op. North) and 4 months in bottle.
