Is it because the mechanisms responsible for its taste or color are not completely understood? Or maybe because agricultural machines are far short of the accuracy of our hand? For my part, I think we should look for the answer in the heart of our identity winemaker. As I lay in its manufacture my passion and values that have passed me my ancestors, starting with a high idea of honesty in work. I'm not a creator but a conscientious craftsman, responsible for highlighting some hidden wonders of nature.
