The winemaker

After several years working at the Cave Coopérative d'Estézargues, Edouard Laffitte felt the urge to work the land and join his friends who had already embarked on this adventure. But not coming from a farming background, he had to create everything. Following a proposal from loïc roure (domaine du possible) to share the former cooperative winery he had just acquired in lansac, edouard settled in the eastern pyrénées. All that remained was to find the vines, and the choice fell on vines at altitude, with a northerly exposure to enhance freshness and fruit, and limit alcohol. As "Jajakistan" is truly at the end of the world, the name of the estate was a natural choice. The grapes are harvested by hand, the vinification is as natural as possible, using carbonic maceration at low temperature, and the wines are unfiltered.
