The winemaker
The Shamans Estate is situated in the Aude, on the southern slope of Black Mountain. The 15 ha of the Domaine are in an isolated valley of other vineyards which are practiced cultivation of agro-biological methods to express authentically an exceptional terroir. (Certified and Demeter AB). Its symbol, the black sheep, is a reminder that the Languedoc offers the opportunity to make different wines and high quality. A small flock of sheep eliminates weeds that grow between the vines and provides a natural fertilizer, supplemented with other organic fertilizers. And indeed, there is a black sheep. In line with organic and biodynamic approach to farming, the area is working to restore a natural balance between the vine and its environment, soil fauna and the local flora, the planetary rhythms. The vines producing red wines are between 25 and 50 years with some young plots of 5 to 10 years. These are Grenache Syrah Mourvèdre and Carignan which represent the bulk of production with a small vineyard of old Cinsault. In the interests of quality, yields are maintained at 25 to 30 hectoliters per hectare. The harvest is manual.
