VINEYARDS: Guyot pruning - Integrated vineyard management depending on the vintage. PRODUCTION: 1800 bottles/ha. VINIFICATION METHOD: Direct pressing - cold settling - temperature-controlled fermentation in vats. AGEING: On lees for 14 months in full tanks with stirring, no Malo. NOTE: This young Mourvèdre vineyard is located on a clay-limestone slope just below a wood, protected from the wind and facing east; the grapes ripen slowly and are harvested in mid-October. The grapes are ripening slowly, and are harvested in mid-October. This vine needs a few (ten...) years to give this wine greater depth.
