The winemaker

Located on the hillside at the foot of which flows the peaceful Sèvre, vineyards enjoy plenty of sunshine favored by the south. The Atlantic Ocean to the west, brings whenever he wants, the life-giving expression that characterizes the Muscadet Sevre et Maine sur Lie, especially in his youth. Renowned for its mineral wealth, our hillside is divided between the rocks exposed, gneiss is found there, amphibole, quartz and serpentine which houses the famous star sapphire. Each season brings its unchanging ritual in the rational management of the vineyard respecting the environment and traditions. The harvest is done entirely by hand ensure the highest respect of vines, grapes and nature. Alcoholic fermentation is the exclusive work of natural yeast of the grapes. The development and harmonization of wine while they are on fine lees, ranging from six months to two years depending on the vintage. This is the time of clarification and stabilization. Bottling occurs on lees without racking between March and June following the harvest. Bottling of Communal appellation Cuvée is performed after two or more years of wine lees. Bottles are stored at constant temperature guard cellar. They will assure you in all circumstances vintages flourished with great distinction and an obvious aging potential.
