Blend: 50% Chenin blanc, 40% Cabernet Franc, 10% Chardonnay Chardonnay Geographical location: Anjou and Touraine. Soil: Clay-limestone. Vinification: Harvested entirely by hand. Secondary fermentation takes place in the bottle, with 24 months' ageing on laths, giving it extremely fine bubbles.
