The winemaker

What luck to have found, near Angers, this wonderful place; have worked hard to develop in this little paradise schist soil and steep. Be aware enjoy the sunrise over the vines when the tears fall light mist, the Aubance, winding our feet, offers its vaporous mists, essential to the ripeness of our Chenins. In the evening, we must also know leave some last rays penetrate the vault and dancing in our glasses, already shimmering dresses of our wines. Since 1998 we practice organic farming, after 7 years of viticulture. This technique requires us to vigilance that is to say still more presence in the vineyards. Tillage is very important. It occupies most of our time, but it improves soil life and that of wildlife. The vine knows better defend itself by seeking in-depth all the elements necessary for growth and health. For best sorts, all the grapes are harvested by hand. A very large part of the grapes, collected in trays 25 and 50 kg, come integers in the basement, which prevents oxidation. For us, a good wine is made in the vineyard, without adding sugar or yeast.
