The terroir of Domaine de la Roche Bleue is full of energy and freshness, with a touch of austerity that allows the wines to improve with age. The winemaker takes care to intervene as little as possible, mainly by hand, and to let the vines live in a natural environment whose balance is based on biodiversity in and around the vines. The vineyard is farmed organically with a biodynamic approach. The soils are lightly tilled in accordance with the biodynamic lunar calendar, so as never to have bare soil, but rather to control natural grass cover. A quest for freedom and fluidity in the wines! this cuvée de jasnières sec is the perfect expression of terroir. The 2022 is fresh and lively, and will delight you for a decade or so. 100% chenin hillside vines averaging 30 years old, mostly south-south-east facing a blend of the estate's different terroirs, flinty clay on limestone subsoil in the middle of the slopes (70%) and richer, clayier lower slopes (30%). Separate vinification for each terroir in oak (70%) and acacia (30%) barrels, the volume and age of the container chosen according to the structure of the juice (228 l to 500 l barrels). On average 400-liter barrels - 3 wines. Long fermentation in troglodyte cellars without intervention for 1 year. No yeasting and light sulfiting as needed at entonnage. Blended in vats before harvest, aged for a further 3 months.
