In a few words ...

These are Cabernet Sauvignon "Vieilles vignes", planted between 1951 and 1978. Old vines were often sacrificed when quantity took precedence over quality. Much to their regret, as wines from old vines have a deeper, more intense taste. Thanks to their deeper roots, they are more resistant to drought, produce fewer grapes and absorb the essence of our terroir: the heat of the summer days, the coolness of the nights and the Mistral wind. After hand-picking, we first vinified the old Cabernet Sauvignon and Syrah separately in temperature-controlled stainless steel vats. After "blending", ageing continued for 15 months in new barrels, 2- to 4-year-old barrels and 600-liter Demi-Muids.

The color is a blend of garnet and purple.

Powerful aromas give way to delicate aromas marked by dry spices, truffle notes, undergrowth and a hint of ginger.

Meat

A table, les viandes grillées comme côtes de veau, gigot ou côtelettes d’agneau se marient à merveille aux jeunes millésimes. Evitez les sauces. A partir de 5 ans, le vin relève des arômes tertiaires plus complexes. Il devient un vin d’hiver ou d’automne qui appelle des mets plus élaborés, un magret de canard, un pigeon au sang.

Pour marier les cépages anciens, nous vous recommandons les fromages affinés à pâte dure, le Parmesan ou le vieux Gouda.
