In a few words ...
Vinification: The grapes are harvested at night to avoid any color change. In the cellar, the grapes are conveyed over a conveyor belt to prevent berry deterioration, then carefully sorted and destemmed. The berries are gently pressed using inert pneumatic presses, to avoid oxidation. The musts are then settled, to obtain clear juices before alcoholic fermentation. Temperatures are controlled throughout alcoholic fermentation, to optimize aromatic expression. Once fermentation is complete, the wines are aged on lees with stirring of the lees. Great care is taken during bottling, which takes place in an inert atmosphere. Tasting notes: A clear, brilliant salmon-pink color. The exceptionally aromatic, complex and refined nose develops aromas of grapefruit and exotic fruit. On the palate, this wine is deliciously balanced, thanks to its natural acidity and the concentration of the harvest, which gives it length and complexity. The palate is an explosion of exotic fruit and citrus aromas. The exceptional balance of this wine is due to the subtle marriage of density and liveliness. This wine will enhance the flavors of Asian and Oriental cuisine, as well as rock fish and white meats.
