Under the pseudonym of Clarendon, Bernard Gavoty, one of the former owners of the estate, was primarily known for his music criticism in Le Figaro, but also for its agricultural engineering activity. Over the years and progeny plots were parceled and 42 hectares of vines are now managed by Roselyne Gavoty Bonnet, who has worked to produce great wines in the three colors, with the name of Clarendon for best vintages. Small hamlet in the tangle of old Provencal roofs, the area also contains Gavoty vaulted cellars dating back to the sixteenth century. In the center of the Var, twelve kilometers from Thoronet Abbey and 60 km from the sea, it has a continental climate of the Côtes de Provence. Located on a clay and limestone soil and Triassic plateau, the vineyards enjoy a nice minerality due to their location. The harsh climate of cold and hot summers winters allow 42 hectares of vineyards produce opulent wines for aging. 85% of red grapes and 15% white varieties give 70% of rosé wines. The red wines are characterized by their length and to open their great aging potential while rosé, demanding and fun enroll in the map palaces. A great recognition for this family's father passed Heritage son who strives to make a constant tribute to his land.
