The winemaker
The vineyard "From Boisseyt-Chol" is a very old property as mentioned in a burrow of 1343: "Viniblio of Boissie". In 1797, the French Revolution allows many tenants to home ownership. The vineyard then enters the family for more than two centuries; six generations it will succeed, through good times as well as difficult times as the phylloxera crisis (1880). In the middle of last century, the wines were then rather traded in barrels on Saint-Etienne and Lyon. in the years following the Second World War, the vineyard "From Boisseyt-Chol" was one of the first in the region to market wines in bottles. In 1988, Agnes and Didier Chol, the current owners succeed John Chol; they extend the domain names on the Condrieu and Côte Rôtie, and enhance the terroirs such as the prestigious hillside Rivoires from which is derived the flagship St. Joseph property. Eleven hectares mostly not mechanized, now enable the production of some 50,000 bottles whose reputation far beyond national borders ... In this highly fragmented and steep vineyards, it is not mechanized issue in terms of maintenance. so all year handwork is privileged, it makes sense during the harvest in September. The noisy horde of bandits then scattered on narrow terraces while porters carrying heavy baskets down the harvest by making a ropes course for which strength and balance are the first requisent qualities! Historically, the wine of the estate wines "From Boisseyt-Chol," is based on respect for traditions. This does not preclude the support of a leading technology progress. Thus, alcoholic fermentation takes place in temperature-controlled stainless steel tanks, pneumatic pressing mode, and aging in carefully selected oak barrels. It is this marriage between tradition and modernity which ensures the highest quality and aging potential unusual for wines.
