The winemaker

Our approach to viticulture wants natural. The grape is a fruit, and the final product must express the flavors. If we follow the principles of sustainable agriculture, our work falls by its very nature of organic farming; we make no insecticide use, and only use natural fertilizers (compost and mixing sheep manure). We let the grass grow naturally among vineyards, mowing and plowing regularly if necessary during dry seasons. In this way, we maintain as much as possible the integrity of the soil and the low intensity of our returns.
