The winemaker

We take a natural approach to viticulture. The grape is a fruit, and the final product must express its flavors. While we follow the principles of sustainable agriculture, our work is by its very nature organic; we use no insecticides, and only natural fertilizers (a mixture of compost and sheep manure). We let the grass grow naturally among the vines, mowing regularly and ploughing if necessary during the dry seasons. In this way, we maintain the integrity of the soil as much as possible, and the low intensity of our yields.
