The winemaker

In March 2013, she joined the benches of the Wine University of Suze-La-Rousse, before a short internship at Chateau d'Yquem, Sauternes. Back among his people, Anaïs will be the fifth generation and the first woman at the head of this wonderful heritage. The vineyards located on hillsides and rocky terraces, based on quaternary marl, very soft rock and limestone. The hillside oriented east to west, enjoys a privileged position for three reasons: - Its general orientation gives it maximum sunshine. - This situation, high above the Eygues, saving him the white and spring frosts that often promotes soil moisture in the shallows. - The plateau overlooking the violent effects reduces the Mistral, without depriving the beneficial role that often plays the wind in our regions (avoiding spring frosts the air mixing it provides). The exceptional climate of Vinsobres and passion of François Vallot allowed certification of the vineyard in Organic Agriculture in 2003, already established practice for many years in his wines and then to the biodynamic Demeter certification in 2004. Biodynamics seeks to strengthen the vitality and resistance of plants, improving the natural exchange between soil and roots, and between heaven, the fruit, the flower and leaves. Thus, expression of terroir in the grapes is optimized and is found in the wine. Biodynamic wines guarantee a better expression of the terroir. Thus, the vines are always plowed and cultivated according to the seasons respecting the specifications of the Biodynamic certified "by Ecocert, Demeter mention." This treatment provided by a qualified and loyal staff provides a harvest of exemplary quality, essential basis for the development of great wines.
