In a few words ...
The grapes are harvested at low temperature to prevent oxidation and preserve all their aromas. The grapes are then destemmed and crushed before being sent to the press. The extracted must is cold-settled, and then the low-temperature fermentation phase begins. Fermentation is stopped cold to retain some of the natural sugars and make a wine with low alcohol content.
