    Hand-harvested, with particular attention paid to the freshness and sanitary quality of the grapes. Fermentation with indigenous yeasts, little intervention - the aim is to let the "Gaudrets" terroir express itself. Maturation: depending on the vintage, in vats or barrels / demi-muids (the domaine uses different containers depending on the cuvée) to give structure and complexity - while preserving finesse and minerality.
