Raclette-type cheese made on the farm. The cheese is smoked in a "real" smokehouse using beechwood shavings. The cheese is smoked 3 times in succession. Unlike many smoked raclettes, which are not really smoked, but flavored in a vat with a "smoky taste" aroma and artificially colored with a colorant. Beautiful, smooth yellow to orange or even brown rind, supple, melt-in-the-mouth white to straw-yellow paste balanced, distinctive taste with milky aromas maturing period: 8 weeks minimum, on wooden boards
