With this cuvée, the idea was to achieve a concentration of fruit while retaining a kind of lightness and freshness. I think this wine is particularly well-suited to rich dishes, often enjoyed during the winter season. A farmhouse cassoulet, for example... or a beef stew with a thick, creamy sauce.
