Jean Baltenweck's 9-hectare vineyard around Ribeauvillé is farmed organically, with no chemical treatments and low yields. Serve between 10 and 12°C. Decant an hour in advance, if possible, to allow the aromas to open up. This wine can be kept for 3 to 8 years. Its tannins will soften after a few years.
