In a few words ...
Bright straw yellow. Mineral and fresh, expressive and well-structured with citrus aromas and a long, elegant finish. The vines are pruned early to reduce yields and maximize the quality of each bunch. After harvesting the ripe grapes, fermentation takes place at controlled temperatures of 16°c for a period of 21 days. Alcoholic fermentation is interrupted very early on to make the wine particularly smooth and rounded. This fresh white wine is not aged in wooden casks, to preserve its fine minerality and fruitiness. The adegas tollodouro vineyards are located in Pontevedra and cover around 100 ha. The gently sloping vineyards face south and lie between the Atlantic coast and the mińo river. Thanks to the mild climate and ideal orientation towards the sun, the grapes here ripen slowly and gently, retaining their typical varietal aromas.
