Situated on a pretty hillside bordering the forest forest of the Dentelles de Montmirail massif, at a place called l'Oratory (oratory in Provençal), these young vines express all the finesse and freshness of a magnificent terroir. Composed entirely of limestone sands, this terroir has given its name to the commune of Sablet. This white wine is a blend of 5 grape varieties: Viognier for its generosity and subtle peach and apricot aromas, Bourboulenc for its liveliness and freshness, Clairette for its delicacy and complexity, Grenache Blanc for its power and volume, and finally Roussanne for its complex aromas. These 5 grape varieties form a quintet of unrivalled virtuosity. The CDR Villages Sablet appellation has enjoyed success with both its red and white wines. Domaine Saint Gayan's is surprisingly well-balanced, with the liveliness found further north, and the concentrated body typical of southern wines.
