In a few words ...
Our vines come from selections massales and clonales, and are between 10 and 30 years old. Planting density is 6500 vines per hectare. Average yields are 50 to 55 Hl/Ha, barely a liter of grape juice per vine. The grapes are picked with the utmost respect for the berries. These grapes are are sorted before being slowly pressed, then the press juices are separated. A settling before fermentation. The must is then filtered and incorporated into the clear juice to add roundness and fruitiness. The temperature is controlled at 18°C, to preserve maximum aroma and finesse. At the end of alcoholic fermentation, the wine is separated from the lees and lightly sulfited.
