In a few words ...
Average yields are 50 to 55 Hl/Ha, barely a liter of grape juice per vine. The grapes are picked with the utmost respect for the berries, then transferred by conveyor belt to the press. Slow pressing and juice separation are carried out. During fermentation, the temperature is controlled at 18°C, to preserve maximum aroma and finesse. At the end of alcoholic fermentation, the wine is separated from the lees and lightly sulfited.
