Color: deep ruby red with fiery garnet highlights Smell: the bouquet is full of the dark cabernet fruit typical of the variety (ripe blackcurrants, blackberries) with spicy notes of leather and licorice Mouth: the dark fruit and spices of the bouquet also determine the palate through to the finish, which is very elegant with silky tannins the santa digna cabernet sauvignon grapes come from selected vineyards in the central valley, the most suitable for the variety. At optimum ripeness, the grapes were harvested between late March and early May, then immediately transported to the winery, where they were first crushed and fermented over seven days in stainless steel tanks at controlled temperatures of 25-28°c. After a total maceration time of just under three weeks, the wines were carefully racked and placed in French oak barrels, where they were aged for six months before being bottled and marketed in May of the following year.
