Color: very light straw yellow with delicate highlights Smell: intense and complex aromatic bouquet of fruit and white flowers with a fresh touch of aromatic spices Taste: also fresh in summer to the palate, intense and lively with the fruity and fragrant aromas of the bouquet - perfect for a simple drinking pleasure! For luces blanco, the ripe grapes were harvested in the early hours of the morning, when it was still cool. The Chardonnay began harvesting in the third week of August, the Sauvignon Blanc had to wait until the first week of September, and the Macabeo, which ripens rather late, also took its time ... it wasn't picked until the end of the month. On the other hand, maximum attention to vinification remained the same for all grape varieties. To avoid oxidation and preserve their aromatic freshness, the grapes are always treated as soon as they arrive at the winery, first macerating briefly on the skins, before being transported to the presses, undergoing gentle pressing and allowing the run-off musts to rest for 24 hours, so that all turbidity particles sink to the bottom and the musts can clarify almost by themselves, before beginning their controlled cold fermentation for around seven days, at temperatures not exceeding 16°c.
