This 19th-century building in the middle of a 3.50-hectare Clos gave its name to the Climat of this vineyard. Following a court decision in the 1920s, the name Château Gris took precedence over the name of the place known as Les Crots, on which the parcel is planted. Since 1978, the BICHOT family has owned and run this monopole, surrounded by a 1.2 km dry-stone wall covered with Burgundian lava, in accordance with the customs of the time. The vineyard is planted in terraces to cling to the slope of the hillside at an altitude of 280 meters. The plots at the foot of the Château produce the red Nuits-Saint-Georges 1er Cru Château Gris, while those at higher elevations are planted with Chardonnay and produce the white Nuits-Saint-Georges Les Terrasses. The clay-limestone soil is mainly composed of a stratum of Jurassic Middle Bathonian. The rock, which is sometimes outcropping, nevertheless allows roots to infiltrate to great depths. The average age of the vines, over 40 years, enables the root system to penetrate deep into the soil, preventing the plant from suffering from drought.
