The berries were hand-picked and sorted; fermented in the open air for 14 days, aged for 12 months in French oak (50% new). This is the great leader of the Yarra Yering stable, yet it is treated with remarkable restraint, further proof (if any were needed) of the brilliance of Sarah Crowe's winemaking. This is a pure Cabernet that needs nothing added or subtracted.
