Assembly : 100% pinot noir. vinification : hand-harvested. grapes sorted, destemmed, not crushed. vatting by gravity, in stainless steel tanks. fermentation by indigenous yeasts, closed tanks, moderate punching down. long vatting depending on vintage (18 to 25 days). barrel ageing, 25 to 30% new barrels (wood origin: center france and vosges). gravity-fed racking: one month before bottling. No filtration. TASTING : elegant, racy red color. Nuanced aromas of red and black fruits with a hint of spice. Plenty of flesh and volume accompany fine, unctuous, very ripe tannins.
