A 2005 Gamay from clay-limestone soils. Yield 25hl/ha. Hand-harvested. Alcoholic fermentation in vats, then malolactic fermentation in barrels, with daily pumping over during 1st fermentation. This is a mature wine, but its impertinence is still fresh in the memory. A small game bird would do well with this airy wine.
