Origin HIGH-ALTITUDE VINEYARD IN THE HEART OF ROUSSILLON, IN THE AGLY VALLEY, NEAR THE VILLAGE OF MAURY. THE TERROIR IS COMPOSED OF BLACK SOILS, SCHISTOSE MARLS FROM THE CRETACE. THIS TERROIR GIVES THE WINE ITS AROMATIC DIMENSION. THE PLOTS BETWEEN MAURY AND VINGRAU ARE ON A TERROIR OF RED SOILS ON COMPACT LIMESTONE. THEY BRING FRESHNESS, CRISPNESS AND LENGTH TO THE WINE. Yield YIELD: 20 HL/HA Average age of vines OVER 60 YEARS OLD Elaboration HAND-HARVESTED IN 10 TO 12 KG BOXES TO RESPECT THE GRAPES. THE GRAPES ARE THEN SORTED ON RECEPTION. COLD MACERATION FOR A WEEK TO CONCENTRATE AROMAS AND COLOR. TRADITIONAL VINIFICATION AT 25°C FOR 1 MONTH, AGED IN BARRELS FOR 10% OF THE VAT.
