Jean-François Ganevat is a leading figure in the Jura vineyards, renowned for his demanding, artisanal approach and deep respect for terroirs. Based in Rotalier, in southern Jura, he took over the family estate in 1998 after a spell with Jean-Marc Morey in Chassagne-Montrachet. Here, he develops biodynamic viticulture, with no synthetic inputs, and cellar work of rare precision, with natural vinifications and little or no sulfur. His impressively diverse range reflects an eye for detail and a quest for emotion in every cuvée. From an exceptional terroir on the slopes of rotalier, domaine ganevat's 2022 poulsard "chalasses" is a rare and singular cuvée, emblematic of jean-françois ganevat's pure, uncompromising style. This wine comes from old vines grown biodynamically on blue lias marl, giving the cuvée remarkable finesse and mineral expression. The wine is vinified in whole bunches, without added sulfur, with gentle maceration and natural fermentation in truncated-cone vats, before several months' ageing in old barrels. The nose reveals a delicate bouquet
